Brussels sprouts has to be one of the most disliked foods among children and many grown up shares this opinion. This bad reputation has often more to do with the preparation than the actual taste itself. Often overcooked and without any balance for the extreme bitterness Brussels sprouts can turn ugly real quick.
With this recipe however we bring you all the best of Brussels sprouts. In balance with the sweet sour of apples and Balsamic, combined with that slight saltiness of Bacon these Brussels sprouts made us forget those ugly overcooked sprouts quickly. Now we love Sprout season!
Ingredients: (serves 1 full meal or 2 side dishes)
500 grams Brussels Sprouts 1 tbsp. Olive oil 2 Shallots 100 gr Smoked Bacon (shreds) 1 Apple (Sour types work best) 2 tbsp. Balsamic Vinegar 300 ml Apple Cider 8 Juniper Berries 1 tbsp. Honey
1. Clean and pre-cook the Brussels Sprouts for 4 to 5 minutes. 2. Pour the Olive Oil into a large frying pan. Slice the Shallots into rings and slowly bake them in the oil on a medium heat. 3. When the Shallots start to get some colour add the Bacon Shreds. Cut the Apple in small chunks and throw in the mix when the bacon starts to colour golden brown. 4. Bake everything for another 3 minutes. Sprinkle the Balsamic Vinegar on top stir so everything is covered. Immediately pour in the Cider and turn the heat up a bit. 5. Add the Brussels Sprouts and Junipers and bring the stew to a boil. 6. Stir regularly, you will find the Cider evaporates quickly. When there is hardly any extra liquid left add the honey and stir again. 7. Enjoy as side dish or with Potatoes for a full meal.
